Palomino Fino is the workhorse grape of Spain's Jerez region and the base of almost all true sherry.

On its own its juice is neutral and unremarkable; under the region's flor-yeast veil it transforms into the salty, almond-driven miracle of fino and the buried complexity of oloroso.

For the buyer, Palomino matters less as a still white and far more as the canvas on which sherry's ageing system paints its magic.
